Heat a few Tablespoons of olive oil in a skillet to medium-high heat. Add chopped raw chicken (I chopped mine using kitchen scissors, so easy and fast), garlic salt and Italian seasonings to taste and cook through. Add diced potatoes and carrots and stir frequently to cook evenly and allow the chicken and potatoes to brown. It is done once potatoes are soft. Serve hot.
