I combined the following ingredients for a tasty and healthy non-dairy meal last night. My husband and I both liked it.
cooked Arborio rice (or any rice would work)
Smoked sausage cut up small and browned in 1 tsp of olive oil
Frozen shelled Edamame (without pods)
Seasonings to taste
I served it hot with a cooked yam and it was delicious!
Yes, that is non-dairy margarine on the yam. :)
