I found Mahi Mahi on managers special at Fresh and Easy and it made flavorful, simple tacos at dinnertime.
I cooked the fish in a skillet at medium heat in about a teaspoon of olive oil with seasoned salt and garlic salt. After flipping the fish once and about 2-3 minutes before the fish was all cooked through, I cut corn off the cob and put it in the pan with the fish to steam. I added a little more seasoning and once the fish was cooked I diced it and put it in warmed corn tortillas with shredded lettuce (cabbage and diced tomatoes would also be good, I didn't have them).
Salsa or guacamole and tortilla chips would be great additions to this meal as well.
